Apple Brandy Gravy recipe

This lovely sweet gravy will work wonderfully well with all sorts of white meats, especially if they've been cooked with sugar or syrup. It would be especially delicious with pork, but it would also work well with chicken or turkey.


  • 750ml turkey/chicken stock
  • 4 tbsp. flour
  • 125ml apple brandy
  • 1 bay leaf
  • 2 tbsp. butter
  • 1 tbsp. maple syrup
  • 1 tsp. each dried thyme and dried marjoram
  • Salt and pepper


  1. Melt the butter and the maple syrup in a large saucepan. When frothy, add the flour. Stir together and then cook for 2-3 minutes.

  2. Meanwhile, heat the stock in another saucepan until warm.

  3. Whisk the apple brandy into the butter and maple mixture until smooth, then gradually add the stock.

  4. Add the bay leaf, thyme, marjoram and salt and pepper. Bring to the boil and then cook for 10-15 minutes. Remove the bay leaf before serving.

If you've cooked a turkey or chicken, pour the pan juices into a jug and then top them up to 750ml. This will give the gravy even more flavour. This recipe serves 8-10.
