Chocolate Gravy recipe

Chocolate gravy is actually a thick, chocolate sauce that originated in America. Full of rich chocolatey flavour, it's perfect for serving over all sorts of puds such as ice cream, cake and clafoutis. This gravy would be especially delicious poured over chocolate fondant or chocolate souffle.

  • 225g caster sugar
  • 6 tbsp. unsweetened cocoa
  • 6 tbsp. plain flour
  • 2 tbsp. butter
  • 1 tsp. vanilla extract
  • 1 litre full-fat milk

  1. Combine sugar, cocoa and flour in a large saucepan. Add a little of the milk, stirring all the while until you have a thick paste, then continue adding milk whilst stirring until the sauce is smooth.

  2. Heat over a low heat until the sauce begins to thicken, around ten minutes. When the sauce has reduced to the desired consistency, whisk in the butter.

  3. Stir in the vanilla, then serve.

You could use chocolate in place of cocoa powder if you want to - just finely chop the chocolate before using. This recipe serves 8.
