Flourless Red Wine Gravy recipe

This simple red wine gravy tastes almost restaurant-worthy - it's absolutely delicious. It also contains no flour. It's a simple enough method, you just need to be patient enough to reduce the gravy down. Serve it with steak or venison - a rich meat is best.


  • 2 tbsp. butter
  • 2 onions
  • 200ml red wine
  • 45ml port
  • 500ml vegetable stock
  • Few sprigs fresh thyme
  • Salt and pepper to taste
  • 2 tbsp. butter


  1. Finely chop the onions. Melt two tbsp. butter in a large saucepan and add the onion. Cook for 15 minutes or until very soft and sweet, then add the wine, thyme and port.

  2. Bring the mixture to the boil, then add the stock. Simmer for a few minutes.

  3. Pass the mixture through a sieve into a clean saucepan. Once it comes to the boil, reduce to a simmer and reduce the volume of the liquid by half. This will take around 10-20 minutes.

  4. Once the liquid has reduced, whisk the butter in until smooth and glossy and season to taste.

Make sure you use a decent red wine for this sauce as the flavour is all about the wine - if you use something cheap, the sauce will taste a little bitter. This recipe serves 4.
