Turkey Giblet Gravy recipe

Make the most of the turkey giblets and cook up this stonkingly tasty turkey gravy next time you roast a whole turkey. The giblets will give it loads of flavour and all you need to do is sieve them out before serving.


  • 100g turkey giblets, fried in oil until browned and cooked
  • 600ml turkey or chicken stock
  • 3 tbsp. turkey or beef dripping, or you could used butter
  • 3 tbsp. plain flour
  • 1/2 tbsp. freshly chopped sage
  • Salt and pepper


  1. Chop the cooked turkey giblets.

  2. Melt the turkey dripping in a large saucepan, then stir in the flour and cook for 3-4 minutes until golden brown.

  3. Gradually whisk in the turkey stock. Add the sage, salt and pepper and then simmer for 10-15 minutes until thickened. Pass through a sieve before serving.

If you don't have any giblets but you still want to impart extra flavour, try using a few cooked and chopped turkey wings. This recipe serves 5.
